Ruby is one of the Demons who escape when the hell gate was opened.  Since then she's been helping out the brothers on and off destroying other demons.  Her main goal is to defeat Lilith.  Ruby also brought with her a knife that is capable of killing both the host and the demon itself. She has also been teaching Sam how to use his abilities since Dean's decent to hell. 

Ruby has since changed host bodies going from Blond to Brunette.   We also know that she was once a witch who sold her soul to the demon Tammi but we do not know what she sold her soul for.
